Salmon, grilled shallots, pumpkin and balsamic glaze.

I have been experimenting with all sort of combinations of foods and I think I may have mastered a taste that truly would be enjoyed. Tonight dish was Salmon fillet oven cooked with shallots and butternut pumpkin. I smeared pesto and wholegrain mustard on the plate then once the fish was ready placed on top of the pesto. I added freshly squeezed lemon, black pepper and balsamic to the top of the salmon. I had to laugh because before I eat, I always take a picture and try to get the best pic, but with the thought ”Is this going to taste good or horrible....” 🙄. The combination of the pesto, wholegrain, balsamic, lemon was amazing. With each cut of salmon, I mixed it with these condiments and it was soooo tasty. My ultimate favourite salmon dish and happy to share with all my readers. Enjoy 😉
