Rib eye beef and roasted vegetables with Greek yogurt and wholegrain mustard.

Had my mother up for dinner tonight. We had a beautiful serving of rib eye meat. Wow how tender and succulent is this meat ? I’ve been eating so much green vegetables full of iron I forgot how much I missed that taste of a good piece of meat. This concoction is no Master Chef meal or any specially prepared or cooked meal. Just a simple piece of meat with roasted potatoes, sweet pumpkin and carrots. The highlight of this dish is the wholegrain and Greek yogurt poured on top of the meat and vegetables.The tangy flavour of the yogurt mixed in with the mustard alone is delightful.

Even though I can only have beef once a week, I can have veal and lamb once a week too, so that’s meat 3 times a week. Chicken 3 times a week and a huge assortment of fish. I certainly am a happy Guardian.
