Potato Brushetta with pesto, tomatoes and basil.

This is one of my favourite ‘ph360’ appetisers. The combination of the basil, tomatoes and pesto is so tasty layered on top of sliced potatoes. The tip is light olive oil, with salt and pepper cooked at 180, 15 minutes each side. You’ll be wanting more.
