Grilled Chicken with capsicum and cherry tomato blend.

I created this dish with no idea what I would call it nor did I have any idea what I would use to compliment the chicken. Ahhhh, The fun of experimenting. I had thoughts of capsicum and cherry tomatoes and my one favourite condiments, Pesto. You’ll see that in a lot of my food posts that I use pesto wholegrain mustard and yogurt.
This crazy dish comprises of grilled capsicum and cherry tomatoes, blended with wholegrain and pesto. I placed a slit in the middle of the chicken breast, cooked it 15 minutes on 180, then added in the slit, cooked for another 5 minutes, then finished it off with you guessed it ...Greek yogurt. Gently placed on top of Romaine lettuce and cucumber. The taste was absolutely divine. Not bad, not bad at all.
